Recipe Wednessday: Pumpkin Struesel Muffins

I’ve decided that every Wednesday I’m going to write about a recipe I’ve tried during the week!  It could be anything from breakfast to snacks to dinner to dessert…and kind of based on things we need to use up in the house.  Like for instance, this week I needed to use up pumpkin that’s been hiding out in the fridge…so since the weather was still cool I decided muffins was the way to go!

The recipe was pretty basic; the only thing I changed was not using pecans and walnuts instead.  And I used a lot of walnuts.  What can I say, my Dad and I really like walnuts!

Taste tested by Dad, he gave them a thumbs up and I finally tried one after dinner as dessert, where I agreed with him that they came out well.  My struesel wasn’t as good as I had hoped it would be, but I think it’s because my butter wasn’t cold enough and ended up melting while I mixed it with all the ingredients.  Oops!  Still tasted great and added a little bit of crunch to the top!

    I just made pumpkin muffins last night, too! They’re tasty, but came out kinda on the heavy side….weird…the one you made here looks awesome!

  3. Those look delic! I love pumpkin anything, especially this time of the year, and a streusel topping sounds like the perfect addition!
