Easy Muesli Cookies

In an effort to make packing up my kitchen a bit easier I thought, what better than to use up the ingredients so there’s less to pack…right?  Ok, it was just me trying not to pack because I don’t want to do it…mehehe.  So I found this recipe online, probably from Foodgawker, and knowing I had a bag of muesli that I wasn’t planning on using anytime soon I figured what better than to use it!

Muesli PB and Chocolate Chip Cookies

Adapted from Wishful Chef

2 C Muesli
1/3 C Vegan PB Chocolate Chips
1/3 C Vegan Chocolate Chips
1 C Whole Wheat Flour
1 tsp baking soda
Few dashes of Cinnamon and Nutmeg
1/2 C Whipped Earth Balance
1/2 C Sugar in the Raw
1 tsp Vanilla Extract
1 Organic Egg

Preheat oven to 375*F.

In a bowl mix the melted earth balance with sugar, then add in the egg and vanilla.  Mix well.

Combine all the remaining ingredients on top except the pb and chocolate chips and stir until smooth.  Add in the chips, roll into balls and bake on a cookie sheet for 10-12 minutes. Let cool on a cookie sheet and enjoy!

  2. These look yummy! Good luck with the packing – it really is amazing how much we accumulate when we are in one place. I shudder to think of the effort it’s going to take to move next time – especially if it’s cross country! ;)
