Make Way For It!

Hi Everyone!

I’m sorry I seemed to have given the blog a back seat this week and only reposted some of my Side Notes for you, but things have been crazy around here.  I’ve spent the past three days driving all over the Central and Southern California areas and let me just say, my little hybrid is living up to itself and not costing me too much in the gas $$ category, thank goodness!  Anyhow, I’ve spent two days this week in different types of trainings for power lines and environmental awareness among others.  It hasn’t been the most exciting trainings, but I got to meet my new coworkers that I will be with day in and day out in less than three weeks!  I still can’t believe that I’m going to be up and moving again!  It seems like so long ago that I only used to live out of two boxes, a large suitcase and my car!

Things otherwise have been nothing short of not exciting.  Haha.  I did find out some interesting information at my PT appointment yesterday in regards to my pelvic muscle running injury!

So apparently when I run, my spine has a curve to it and to give you a picture, it’s like having good posture with your butt pushed out more behind you than it should be.  Along with this, there is an imbalance in the strength between my hips, my right being the weaker of the two (which we all found surprising since I’m right handed, right side dominant).  With these two things in mind, I’ve been prescribed additional exercises in hopes of strengthening that right hip so my left will stop compensating for it.  It was interesting to find all these things out yesterday and I’m hoping it’s going to get me back to running something longer than 3 miles soon!

Oh, I have been a baking queen lately though!  I attended both a birthday party and a surprise bridal shower last weekend and made cupcakes for each of them.  For the birthday party I made the birthday girl’s favorite: Red Velvet with Cream Cheese Frosting.

I proceeded to make a huge mess that consisted of getting red EVERYWHERE on my kitchen counter…lets just say that I have a date with some bleach in the coming days…haha.  I not only made those, but also some vegan pb and chocolate cupcakes with pb chocolate frosting!  The frosting I thought was going to thicker but ended up coming out more like a ganache, which I think everyone enjoyed anyways.

I didn’t get many picture from the bridal shower except for when we dressed up the bride to be in all her wrapping paper…she was a good sport about it!

That’s it for now..I hope something exciting happens so I actually have something to write on this dang blog…sorry to be so boring!

    Sounds like you’ve been super busy! Those cupcakes do look delish, too, even if the red got everywhere.

    My best friend is getting married this year, and her choice for the top tier of the wedding cake — red velvet! I love the look (and sound) of those vegan chocolate cupcakes. Now you’ve got me hungry :) Good luck with the new job!

    I tried to make red velvet cupcakes a few years ago, and that was a HOT MESS. It was so traumatic that I haven’t attempted them since.

    I am always so impressed at how nomadic you are; I really admire your ability to get up and move!!

  5. I absolutely love those cupcake holders! I hate when I put them in tupperware and they get all messed up from being squished together!

    Ooh I’ve only been to one bridal shower, but I find that bow tradition so funny (but fun!). Glad you’re having fun training and getting settled with your new digs… excited to hear what comes for you!
