Field Food

Happy Monday everyone.

Honey says hi too.  She looks like she’s got the Monday feeling, doesn’t she?  Kinda how I looked when I woke up this morning.  The weekend was too short, due to having to work on Saturday!

Anyhow, I actually have a full food post for you today!  I can’t even remember the last time I took pictures of (almost) all my food!

I apologize for the lighting in my pictures, but they’re being taken at like 5am when it’s still super dark and after the sun goes down in the evening.  Anyhow, this morning was an early field day so I had a made ahead breakfast: breakfast cookie!  Very simple and easy, consisting of oats, banana, cinnamon, vanilla, pb and a peach!  Was a great fuel for the field!

The weather was actually pretty decent this morning and made all the hiking a lot easier than it was last week.  We set out all our traps and I admired the beautiful scenery.  I will never get tired of this:

I was out there for a few hours and while I didn’t feel hungry while I was walking, I was tired on the long drive home and snacked on an apple I picked up at the farm over the weekend.  It was just what I needed to hold me over until I got home for lunch, which I was pretty excited for.

All I wanted was something savory for lunch, as I never really crave sweets after hiking, so I made a hearty vegetable sandwich, in which I included pieces of butternut squash and bell peppers from my jambalaya last night!  I also had three (two pictured) of my cookies I made this weekend as an end for the meal…just what I needed.

I took a much needed nap then a snack before heading back out into the field for the rest of my work day.  I heated up an apple with some cinnamon, and then added some of my favorite granola to the top.  Somehow my picture at the picture of the apple and granola, but I had a picture of the granola!

A few hours of hiking and driving later I was home and ready for some dinner!  I wanted to use up my jambalaya but didn’t feel like pairing it with rice, so I threw some in the blender and made it into soup!  I heated it after blending, adding in some tempeh and pieces of more jambalaya, and paired it with two thick end pieces of bread for a super hearty dinner!  I couldn’t even finish the soup I was so full!

I swear there is no way to make soup look appetizing.  I apologize if you think it looks like something gross!

I’m off to clean up and hit the sack!  I have to be up at 4am for work so it needs to be an early night!  Hope your Tuesday goes well!

  2. As unappetizing as soup sometimes looks, i still think it is SOUPer delicious :-)
