And Then There Was Food

What a weekend!  I apologize for the absence after the Expo but it was a whirlwind of events afterwards!  Lets start with Sunday eh?

I woke up feelin err, under the weather, literally.  The clouds were low and bleh looking, but I blew all the snot out of my nose before heading out for my long run…along with prerun fuel of course: PB on 9 grain bread with a very tiny apple on the side.

I headed out for my last “long run” before my 1/2 Marathon in Oakland on the 27th!  I can’t believe it’s less than 2 weeks away!  I’m pretty stoked for it, but I’ve run across a bit of a stumble as I tried to log into the site with my registration and apparently I’M NOT ON THE ROSTER!!!  You can imagine my anxiety have the error message, but luckily I caught it now instead of at the expo when I had no bib!  Yikes! better figure this out!

Anyhow, a mini pack of Watermelon Gu Chomps, 12.18 miles and 1:53:28 alter, I finished my run!  It was so nice to run flat and without any crazy wind, but I wasn’t a fan of all the lights I had to stop for.  It’s the bad part of living in the city…

As soon as I got home I used one of my expo samples: nuun electrolyte tablet.  I have seen these at REI but their price is wayyyy steep (which we presume is due to the artificial sweetener they use, which is apparently very expensive and the oldest one around) so I haven’t tried them yet.  I popped this single tablet pill into a water bottle and shook until dissolved.

It was actually quite tasty and not too sweet!  Sadly all artificial sweeteners hate my belly, so mine was a bit upset after the fact, but I give it a thumbs up for you that are wanting to try a new kind!

I ate a quick lunch before heading off to the store with my mom and man, organic vegetarian fed free range eggs are so much better than the store stuff.  Mom finally made the switch! I had two on some 9 grain bread with spinach, tomato and mustard.  Real mustard, not that sweet stuff my mom is obsessed with.  Haha…sorry Mom.

I also tried out another new item which according to Monica, is a sin since I haven’t tried it yet…so…Pirate’s Booty to the rescue!  I got two sample flavors, this one being the Sour Cream and Onion.  Somehow I didn’t realize how light these little puffy things were but I loved the flavor!  Mom wasn’t a fan, but I liked it!

Dessert consisted of some Chocolate Granola Munch that I mixed into Reusable Cereal Bowl via Attune.  That stuff is so great…I might have taken about half the bag in my bowl…thank goodness it was huge!  Haha!

I headed home on the nasty 5 Fwy munching on an apple and Banana Walnut Muffin with some pb before heading over to Whit’s and going out to eat!  You can bet I was starving at that point!

We had one Thai place in mind but when we arrived it was closed, so we headed over to another that is next to my favorite fro yo place (that I sadly can no longer enjoy, freak’n belly)  called Thai Orchard.

I decided on some appetizers and a salad for dinner.  I got the Steamed Spinach Veggie Dumplings with a Ginger Sauce…


And Spring Rolls with a Peanut and Coconut Sauce.  Pretty good!


The service was nothing to holler about since the place was not crowded at all, and we ended up missing Rango, which we wanted to see.  Sadness.  Instead we hit up the Red Box and rented Knight and Day with Tom Cruise and Cameron Diaz, which was actually a lot better than I thought.  We also hit up TJ’s where I got some snacks because obviously I was no where near full after dinner.

This morning was the usual, but breathing became an adventure with my now head cold that I’ve seemed to acquired.  Meh meh.  I was way excited for breakfast though!  That Attune reusable bowl of mixed cereals (I mixed in Chocolate Granola Munch, Apple Cinnamon, Crispy Brown Rice with Mixed Berries)?  I had that on top of some PB Soy Yogurt with lots of strawberries…what’s not to love?!  Chocolate in breakfast!? Yes please!

You can bet I didn’t let the cat have any.  It was all mine to have.

Anyhow, sleeping with a head cold is never an easy task, so I needed some caffeine…in the form of my favorite EASTER CADBURRY MINI EGGS!!!!

Mom spoiled me and got me a bag at the store when we were out yesterday so of course there was no passing them up.  And what was my thought when I devoured them as I ran out the door for work?

Love. This.  It’s the front of Earnest Eats coupon and product booklet Monica and I got at the Expo.  We had a talk and it totally brought me back from the bad place I’ve been the past few weeks.  So..chocolate at 9.30am!?  No guilt what so ever!

I don’t know if it was the yogurt bowl or the chocolate eggs, but I didn’t feel hungry all day!  It was a beautiful day in the field, so I was taking advantage of it.  Gotta love the sunshine.  I eventually settled down to eat some sort of lunch, but realized I did a horrible job packing one. I ended up eating the pear and only two cucumbers (they were oddly making my mouth dry, but I think it’s the cold), tried the plum bit it got beaten up in the travels and was super soft and bruise, but the best part was the next product…

It’s like a flashback to college for me!  I used to eat the Ritz ones all the time because I always had leftover cafeteria points!  These ones are just as good, and without the hydrogenated oils.  Yay for better to my health ORGANIC Mini PB Sandwich Crackers!

The afternoon was crazy and my cold was finally getting to me, but many many hours later I was able to start on dinner. I had some grapes to keep my appetite from eating my arm…

And made a sort of  Minestrone Soup minus the pasta!  I used another expo good too: Fresh At Hand Garlic.  This stuff is awesomely flavorful!

I chopped up an onion with the garlic, and cooked it in some EVOO before adding in vegetable broth and water, along with a huge chunk of some sort of hard squash my mom gave me, two potatoes, two carrots, 1/3 head of cauliflower and fresh herbs and sea salt.  Talk about real food!

I cooked chickpeas last week so I added those to my single serving bowl because I might want to use them for something other than the soup!  It turned out really flavorful!  I was afraid I had added in too much fresh lavender but it ended up being a good amount.

I might have had a few more Mini Chocolate Eggs afterwards and ready to hit the sack.  I need a serious night of rest, and foam rolling.  After the long run yesterday and wandering the expo in flip flops (never again!) my IT bands are KILLING ME!  Bah!

    you've got some good eats going on! i love those cadbury mini eggs — some of my friends and i were just talking about our fave easter candy and that made the list! hopefully everything gets sorted out soon for your race :)

    I saw some Cadbury's big eggs the other day and wanted some SO BADLY, but not for the next 35 days!! I decided that the day after Easter I'm going to go to CVS and take advantage of all the deeply discounted candy. My freezer will allow me to enjoy it for months :)
