Best Yet

Man, today totally started off on the wrong foot in so many ways and then totally turned itself around!  Totally what I needed after the month I’ve been having!

Alas, the morning didn’t start off well cause I was working off of just over 4 hours or work.  I woke up at this insane hour and then just laid there for a good three hours before finally drifting off into la la land…and didn’t make for a pretty picture when I looked in the bathroom mirror after I woke up late.

Anyhow, I tried to make the best of it and start the morning off with as much nutrients as I could. I made a smoothie with a banana, 1/4C peanut flour, kale, 1/2C frozen blueberries, some xanthum gum and ice.  It came out beautifully but I knew I needed some carbs so I cut up a Carrot and Raisin Muffin to go on top.

Oh boy was that tasty!

I headed out to the field and ran into more trouble when it came to getting where I needed to go…like being stopped by sheep and gates.  The gates weren’t so bad because I could open them, but the sheep?  They weren’t move’n for nothin!

Anyhow, it was getting close to lunch, but not close enough so I decided on eating a snack instead of my lunch.  I was hesitant to really eat at all since after the smoothie my stomach was super upset and on the verge of making me not finish work, but I ended up feeling better.  Go figure!  I started off with a pear and after eating that realized that I was hungry, went for one of my Pumpkin Chocolate Chip Muffins.

Since I was running late that morning lunch was done in a hurry and wasn’t too exciting, but tasted good since I was afraid for my stomach.  I mashed up a 1/2 an avocado and paired it with Three Layer Hummus to spread on two pieces of my bakery bread with an apple.  Sat well thank goodness!

After I got home and finished work my hunger was in full force, but I wanted to run later on, so I slathered another Carrot and Raising Muffin with some pb and let it set before I went to the gym.

This is where the fun began!  I’ve been sticking w/ the Veganism really well this week and have definitely noticed a difference!  I’m feeling much lighter after meals and this run was just the proof I need to show me how well it was working!

Normally when I go for a run I end up finishing with an upset stomach/intestines.  TMI, but I end up in the bathroom most of the time and am not happy about it.  Anyhow, today was totally different.  Having eliminated so many of my normal foods and eating more real things (ie not processed and with all those extra sugars) my stomach has been much happier (although I seriously think I’m going through a processed sugar withdrawal…ugg). 

I ventured off to the gym with the intention of running 5.5 miles but ended up doing only 5 and walking an extra mile for a cool down.  But man oh man, this run was awesome. I started off at 6.0 at a 1% incline but gradually increased my way all the way up to 7.0 and kept it there for 5 miles!  There were a few adjustment periods where I had to try and wipe sweat from my eyes, but damn I felt great! I felt light on my feet and so speedy!  I finished the 5 miles in just over 43 minutes!  What what!? I can’t remember the last time I ran that fast for that long and felt great after to boot!  I could have kept going but I think I had sweated out most of my body water so I had to stop before well, I dehydrated myself to passing out (I’m an insane sweater btw…).

Totally awesome and wow!  That’s all I can really say about that!

I was pumped when I got home and couldn’t wait to get started on dinner!  I had plans to make Snobby Joes from Veganomicon and was famished by the time it had finished, which was why I had to eat an orange while I was waiting.

I put the Snobby Joe mixture on top of a bed of mixed greens with a cut up carrot, Persian cucumber and leftover tomato pieces.  It tasted fantastic!  Oh, and I also added the two end pieces that I had leftover of my Sourdough Vegetable Bread…great way to wipe up all the juices!

Now I’m noshing on a handful of vegan chocolate chips (Guittard is vegan!  yay!) and getting ready for bed!  I’m tired after today!  Whew!

    Congrats on the awesome run! That is one of the best feelings in the world. Glad to hear your stomach issues are disappearing – I hope it stays that way. I end most of my nights with some chocolate chips, too. I just love them!

    Those snobby joes look amazing! Sloppy Joes were one of my favourite meals when I was a kid. I think I'm going to have to try making those this weekend!
