Do you know what’s coming!? What’s showing signs of life?!
SPRING!
And you know how it’s showing it’s beauty?
The sun no longer goes down at 4pm!! YAY!!!! I live for the sun going down at 8pm during the summer!
Ok, enough of that err, spring talk, since I know some of you are still buried in snow…don’t worry, I have some coming at the end of next week.
But, here’s to Vegan Day #2 of 7!
I know that my oats look like their normal pb and apple cinnamon self, but of course you can see the blueberries on top…but what you don’t see is the PUMPKIN that I mixed in. I am not a fan of pumpkin being sweet (like pumpkin pie; hater!) but figured what could it hurt…I’m all for changing things up this week anyhow! I may have only added two tablespoons to the mixture before cooking it, but boy oh boy was it creamer! I’ve got a half a can left, so this will be happening more often!
The field was cold and dreary…and took a toll on my mood. Boohiss.
What do you think? Do I pull off the hardhat?! Uh, yeah, no.
Alas, I had to eat my lovely lunch under the turbines, with my hat. I have to oblidge by the rules. So while looking for birds and having the crap scared out of me by the sounds of the turbines turning, I had a veggie avocado sandwich on Vollkorn Bread that I got from the bakery and an organic orange.
I guess I didn’t have enough in that sandwich because I was hungry a tad bit later and noshed on a Carrot and Raisin Muffin for a snack.
I spent the afternoon trying to read one of the new books I got per all of your great suggestions! I never read Night when I was in school so I knew I had to read it and can’t wait to get on The Girl With The Dragon Tattoo! I’m also on a hunt to find Water for Elephants as they didn’t have it at the local store…which is miniscule of course.
And then I proceeded to fall asleep while eating carrot sticks.
After I woke up, cold and out of it, I dressed up for my afternoon run. I didn’t know how much I wanted to run, since I’ve had the quad bothering me. But, I made it along the fat and dirt paths through the apple fields! I ended up running 6 miles in 56 minutes and felt great the entire time! I was also surrounded by the smell of apples…sadly rotting in the sun, but it smelled like applesauce. Don’t judge, I don’t like all things that rot.
Returned home and while waiting for Whit to get here but totally had to start on dinner. I was starved! I saw a recipe in my Chinese Eating Cookbook and since I had an eggplant in the fridge, I knew I had to have it tonight! I started off by cooking a pan of Sesame Gigner Rice while I got started on everything else. Next came sautéing an entire onion with 4 cloves of garlic in some sesame seed oil and added in an entire de-veined Chinese Cabbage until everything was nice and wilted. I chopped up the eggplant into bit size pieces and removed the former ingredients, before cooking up the eggplant for about 5-8 minutes on the stove top.
I mixed all the veggies together in a separate bowl and then quickly stir fried up an entire block of tempeh to finish off My Second Vegan Dinner of the week! And therein lies my dinner. Oh man it was tasty. Too bad Whit ate all the leftovers! Dangit!
Anyhow, I thought I would give you a good laugh, or smirk, whatever, of Honey attempting to remove her collar. I was cracking up…



I'm so excited for spring, too! I couldn't agree more about the sun setting at 8 in the summertime – I love it! You look cute in your hardhat. That's hard to pull off! I just started reading Night a few weeks ago. I'm terrible at reading. I start a book one night, read 20 pages and then it sits on my nightstand. Hmmmm, maybe I'll give it another whirl!
seriously, I was SO happy too when I got out of class @ 5 and it was still light!

Your kitty is so adorable!! NOOOOO I don't want you guys to have spring coz then that means that I have to have dumb old cold winter. Nooo it's not fair I tells ya! Oh my gosh, your dinner looks so tasty…maybe vegan meals don't have to be lacking after all

Glad you picked out some books! Night is such a GREAT book! I read it in HS and it stuck with me. I'm going to re-start my Girl with the Dragon Tattoo.. we should get together for a mini book club!

Awesome job with Vegan dinners! And with the Girl with the Dragon Tattoo, don't get disouraged at the beginning. It's a bit slow for about 100 pages giving you backround info, but then it gets AMAZING. Push through!
I love pumpkin oats. And maybe it's just because I know what pumpkin (definitely just wrote pimpkin… hahaha) oats look like, but I can totally see it!

Ahaha, tell spring to make sure and stop here too! I'm so with you on the pumpkin thing- i had NEVER even tried it..kinda freaked me out! But i've been making oatmeal, and just adding 1/3 cup pumpkin and a scoop of protein powder at the end, with cinnamon and nutmeg…i'm kinda into it! SOunds like your vegan challenge is not too bad:D
I noticed it was still "Light" out at 5 pm when I left for school – it made my drive there so much better!
I cannot wait for spring.

I'm tired of this winter thing. Seems to come around every year. Could it just always be spring? And not spring like in late-March, but spring like in mid-April?

Honey is a doll! Sometimes I'll put a loose elastic or hairtie around my cats neck just to see them try to take it off. Never fails to crack me up!
