Vegan, Day 1

Thanks all for the great comments on my Muffin’d to Love post last night.  I am always taken away by your supportive comments and encouragement!  We just gotta believe we’re good enough!

Anyhow, to keep my spirits high and with something to accomplish, I decided to join in on Morgan’s Vegan for a Week challenge!  It started today and no, you don’t have to do everything entirely vegan, but I sure am going to try!  I’ve been a vegetarian for almost 8 years but this is the first time I’m going vegan! I know the main things that differ from being vegetarian includes no milk and eggs…but I don’t know about all those other hidden and funky named ingredients…do you guys know about these ingredients!? I’m looking for a good list to compile for myself and anyone else that might need/want it!

This morning started off with a delicious Carrot and Raisin Muffin that I made yesterday, slathered with natural pb and sided with a pear.  It was just what I needed early in the morning!

I’ve spent the morning camped out on the couch (yes, I have a job, but not enough for full time, so I get extra days off!) looking over all my vegan cookbooks…which I just realized, I own more vegan cookbooks than vegetarian!  How funny is that!?

Anyways, started getting hungry late morning so I snacked on an orange and finally tried on of my Pumpkin Muffins from yesterday also.  Oh goodness that muffin is good.  I kinda can’t wait to eat yogurt again so I can crumble that sucker on top with some fruit!

Now it’s time to make sure I have all the ingredients for all my vegan meals this week!  It’s gonna be exciting since I’m stepping outside of my “normal eats” for meals!  Yay!  Making changes is gonna be fun!!!

Are you going Vegan this week?  Any suggestions on meals?  I’ve lot lots of lentils, beans and tofu!

    I'm not a vegan either, but I've unintentionally been eating vegan since I came back to school in early Jan! It saves me some cashola haha.

    The only "extra" ingredients I can think of that aren't vegan are glycerin-type stuff and honey.

    I'm not doing Vegan for a week since I've got a fancy dinner out planned and I'm dying for fish! However, tempeh, falafel could mix it up a bit?

    I've done vegan weeks in the past and LOVED the results. Actually I think the best part was cutting out caffeine and carbonation, but the super clean eating helped too!

    Lots of roasted veggies and healthy fats were on the menu for me. And inspired by The Kind Diet, some warm grain bowls with simple edamame mixed in!

    I'd be super interested in that list of "weird ingredients" if you get one!

    Girl, you are absolutely amazing and such a huge example to me!! Good for you!! I LOVED your muffin post. You are going to have so much fun in HAWAII and you are going to look hot:) It is amazing to be at the point you are where you realize that your training is more important than a stupid lb and girl you seriously look amazing!     I could never go vegetarian, let alone vegan! However I do have some vegetarian meals every so often without purposely trying to be vegan. I love bean meals. I went through a phase where I would cook some cous cous in veggie broth and mix in red kidney beans, avocado and mixed veggies and then top it with salsa. Mmm yummy! Good luck on your vegan week :)

    Lately I've been loving savory oats with nutritional yeast as an easy vegan meal!! I feel like they'd also be awesome with hummus, though I've yet to try it. Good luck with the challenge girl!!

    That's great about the vegan challenge, can't wait to read more about it. Whey is the main hidden ingredient I have to watch for, it seems to be in a lot of products that I wouldn't have thought needed it like spice mixes, some store bought hummus, crackers, snack bars, etc. I've also seem egg whites in hummus before which was odd.

    Every week is a vegan week for me. :-) I like to use tempeh a lot for stir fries, bakes and even a meat alternative in tomato sauce and the Trader Joe's brand is the cheapest.

    I love stirfrys with lots of veggies and tofu! Tonight for my day 1 dinner I made tacos with roasted veggies, brown rice and black beans, delicous :)
