Thanks all for the great comments on my Muffin’d to Love post last night. I am always taken away by your supportive comments and encouragement! We just gotta believe we’re good enough!
Anyhow, to keep my spirits high and with something to accomplish, I decided to join in on Morgan’s Vegan for a Week challenge! It started today and no, you don’t have to do everything entirely vegan, but I sure am going to try! I’ve been a vegetarian for almost 8 years but this is the first time I’m going vegan! I know the main things that differ from being vegetarian includes no milk and eggs…but I don’t know about all those other hidden and funky named ingredients…do you guys know about these ingredients!? I’m looking for a good list to compile for myself and anyone else that might need/want it!
This morning started off with a delicious Carrot and Raisin Muffin that I made yesterday, slathered with natural pb and sided with a pear. It was just what I needed early in the morning!

I’ve spent the morning camped out on the couch (yes, I have a job, but not enough for full time, so I get extra days off!) looking over all my vegan cookbooks…which I just realized, I own more vegan cookbooks than vegetarian! How funny is that!?
Anyways, started getting hungry late morning so I snacked on an orange and finally tried on of my Pumpkin Muffins from yesterday also. Oh goodness that muffin is good. I kinda can’t wait to eat yogurt again so I can crumble that sucker on top with some fruit!
Now it’s time to make sure I have all the ingredients for all my vegan meals this week! It’s gonna be exciting since I’m stepping outside of my “normal eats” for meals! Yay! Making changes is gonna be fun!!!
