Is Saturday already gone? I k now some of you are closer to Sunday than I am, but man oh man it went by fast! Probably because I ended up doing a bit of work and it helped pass the time.
I went on a run w/ my running partner this morning and beforehand noshed on a small apple, then out the door we went. Seriously, best running weather ever this morning! We had sunshine with a bit of a breeze and the best temps I could have asked for…I hope it’s like that tomorrow when I go on Whit’s long run with him!
Anyhow, upon return from the 4.41 mile run in 50 minutes (I help to get my running buddy going faster these days…) I had to race off to the pick up area to get my Abundant Harvest Box for the week! Oh boy was it heavy today! Check out the goods!

- Apples
- Oranges
- Lemons
- Onions
- Daikon
- Parsley
- Butternut Squash
- Beets
- Chinese Cabbage
- Stir Fry Mix
I’m so excited to dig into this box! Wait till you see what I did with dinner!
I had to go off to work so I hurried along with breakfast, which was almost lunch at that point in time, and was a mix of cereals, banana, blueberries and almond breeze.
Then it was off to the mines! Ok, not so much, and more like the mountains. I was trying a very battered road to see if I could get my surveys done but no go…so I tried to do some other stuff which meant I was going into places I wasn’t supposed to be so it made me nervous and I left…haha. Like that sentence?
Sure was pretty though!
I got home pretty late in the afternoon and was starving by the time I got something to eat! Even though I was a bit chilled I really wanted a smoothie…and some yogurt. What better than to combine the two in a smoothie, right? This pretty baby included a carton of Greek Yogurt, frozen blueberries, strawberries, spinach and ice. I topped it off with some Uncle Sam’s Cereal and inhaled away!
It didn’t hold me over as much as I would have liked so I snacked on a piece of Boysenberry Chocolate Chip Bread…times two.
The evening went by reading my new Self Magazine and talking to friends on the phone…made me miss Florida. I want to go back and drive those damned airboats…
But I was on a mission to use up my AH Box supplies tonight and combined a bunch in soup!
This is what went into my pot:
- 1T Olive Oil
- 1/2 Diced Onion
- 5 Cloves of Garlic
- Italian Spices (mixed and flavored to taste)
- 1C Vegetable Broth
- 3.5C Water
- 1 Small Butternut Squash, chopped
- 1/2 Head of Chinese Cabbage
- 1/2 Spaghetti Squash
Directions:
1. Sauté oil, onion, and garlic until glazed. Add in liquids and spices then bring to boil.
2. Add in butternut squash and cook on medium heat, covered, and cook through.
3. Add in remaining vegetables and cook through until heated and the cabbage is wilted.
4. Serve with your choice of protein (I used two scrambled eggs) and some crackers! Awesome dinner is served!

I've been trying so hard to get my family to do a CSA – I'm totally getting one when I move out! And way to make a creative soup with the goods…spaghetti squash in soup sounds great!
