I have been pounding back the water and carbs today to gear up for my 11 miler tomorrow morning, before all the shenanigans start when my brothers come to town! I’m so excited it’s not even funny!!!
I even purchased this baby to break the bank and make sure I’m fueling properly during my runs, as I’ve been notorious in not doing very well at all in the past. But we’ll see how it works tomorrow! I hope it all works out well!
Anyhow, today was the first day I took pictures of all my eats since I had to take a break a while back! It was so weird to have my camera with me everywhere and all the time! I got used to not lugging mine around! Haha!
It was an early morning staking out foxes and coyotes in the desert so I scarfed this down before running out the door…white peach, strawberries, blueberries, Cinnamon H2H and Naturally More PB.
By the time I got home a few hours later I was STARVING! I was excited for my snack though, because look what I found at the store: CHOCOLATE OIKOS!!!
I’ve never had it before and was actually quite confused when I opened it and it was white…I thought it was chocolate? Dork me, I need to mix it up. I never buy yogurts with mix ins so I’m not used to initially mixing my yogurts! Lame, I know. I used an apple for dipping and had a piece of zucchini banana bread on the side. What did I think of the yogurt? It was ok, a bit more bitter than I would have liked…but I have a feeling I’m going to like it more if I freeze it and use it like ice cream…but I suppose technically frozen yogurt…duh. (Can you tell I’m tired, and it’s only 8pm?)
After getting paperwork and computer work done for work I finally sat down for lunch! I baked some tofu last night for dinner but by the time it came around to eat I wasn’t hungry. Saved for today! I had a few pieces that I seasoned with laughing cow light, and extra veggies, with grapes on the side. Perfect summer lunch.
I spent the afternoon messing w/ my computer (I might have to send it back again, mother f’er) and snacked on some unsalted pb pretzel nuggets. I love those little puppies.
I did some baking while getting dinner done and snacked on a handful of fresh blueberries that were being used for the muffins and bread. I roasted a whole bunch of farmer’s market squashes in different seasonings and will have to eat all weekend! Yay!
Of course, I couldn’t roast all those veggies and not eat them, right?! Two scrambled eggs, with a side of veggies and a kiwi.
And for dessert? A raspberry chocolate chip muffin with lactose free ice cream. Believe me, I needed the ice cream as the oven had made my kitchen so hot from the roasting that I was sweating. Ack!
And now, SLEEP! I gotta get up early for 11 miles tomorrow! Yikes!

Oh! AND HLS IN ONE WEEK!!! I’M SO FREAK’N EXCITED!!!
