Because I know you watch Glee (I mean really, who doesn’t; if you haven’t, DO IT!) a “funk” seemed to be going around but like them, I was able to pull myself out of it! Thanks goodness for that!
I’ve had a few fun things to eat the past few days as I’m trying very hard to no “eat what I should" but “eat what I truly want.” This concept is coming up as I’m not only trying to satisfy myself physically but also emotionally…if I eat things I don’t really want to eat, but think I should…I just end up eating twice as much because I end up eating what I really wanted afterwards!
Yesterday morning I wanted a SMOOTHIE, SO BADLY! Luckily I had a frozen banana in the freezer watching to be liquefied…but knowing smoothies don’t hold me over, even with the addition of PB…I decided to make it kinda like Overnight Oats but as a Smoothie In A Bowl Version! Did that make sense at all?
- Frozen Banana
- Splash of USVAB
- Handful of fresh blueberries
- 1.5 T PB
- 1/3C quick oats
- Few extra blueberries
I blended together the banana, USVAB and the handful of blueberries. Transfer to bowl and mix in the oats. Top with extra blueberries and pb and you have…Oatmeal Smoothie In A Bowl!
Protein is the only thing that keeps me going through work and all the walking (currently averaging 10 miles a day, would be more but so many rolling hills and high speed winds/gusts) so I’m trying to get it in everywhere I can. So what do I resort to?
Processed things, but hey, they work! CLIF Builder’s Bars have been my go to as of yet…as I had 1/2 yesterday and 1/2 today for morning snacks. I like the flavors and this one isn’t too “protein-y” tasting and has enough crisp and such to make it enjoyable. I’ll probably buy this one again, but I still think the PB one is better. We’ll see what I think of the Mint Chocolate Chip one I have waiting to be eaten!
You totally know I’m eating fruit like it’s going out of style after hitting up the market last weekend…and man oh man, I cannot even begin to describe how delicious the first peaches of the season are! Paired up with one of my Berry Almond Chocolate Chip Vegan Muffins and you have a staying snack…well, kinda. I had this after I got home from work, 3 hrs after lunch…and it lasted me about 30 minutes. Hah!
Last nights dinner was a leftover’s salad mix…I’m sure you can guess what went in it. Duh, leftovers. No biggy to describe for you.
And I woke up this morning in a funk. I didn’t get a good night’s sleep so you can guess how I wanted to kill my alarm when it went off at 5.15am. Yikes. I must have looked nasty mean this morning!
But I made sure to start off the day with a good mix of food…which I thought would hold me over well, but after a few hours walking out in the field I was almost throwing up I was so sick and hungry! Yikes!
- Greek Yogurt
- Piece of banana bread
- Mixed fruit (I made a fruit salad the other day and was just now getting around to eating it!)
- Some Granola
I ate the other half of my Chocolate Clif Builder’s Bar from yesterday mid morning and after getting back to the car for lunch I took a 10 minute cat nap then noshed on my lunch.
I braved and fought against every word my ED screamed at me as I made my lunch this morning.
Yes, this is a fear food of mine and has been for years. I don’t want to give reasons as not to trigger anyone, but lets just say I do not have these often at all, and if I do, with them comes a mountain of guilt.
But not today. This morning my ED wanted me to only prepare 1/2 a bagel w/ almost a T of PB. Um, no. I cut the sucker in half, lathered on almost 2T of PB and headed out the door.
And how did I feel when I had it at lunch?
No regrets. EVER.
Paired with an organic fuji apple from Trader Joe’s and I was set. Thank goodness for this lunch because I’m betting without it I wouldn’t have made it through the last 4 miles of very hilly transects!
We got home to deal with stupid issues for the internet we have yet to get (I’m currently using my very slow phone internet which is why I haven’t been commenting on your posts lately! I’m sorry, I’m going to try and catch up soon!) and I noshed on some more fresh fruit for the afternoon…with a nice ramekin of trail mix on the side!
And even though I walked about 10 miles of hills today, I couldn’t not celebrate NATIONAL RUNNING DAY!!! You guys know I’m a runner at heart but with work it’s been hard for me energy wise to run and train for anything. Boohiss! In due time…in due time. Anyhow, I set out and ran up the hill that leads away from my apartment and up into the mountains…oh man that was tough…and it took me 16.20 to run up it…and 12 flat to run back down! HAH! I don’t know how much ground I covered but I could have cared less, I haven’t run in almost 4 days!
I came back and did about 15 minutes of abs and then cleaned up for dinner!
I was super stoked for dinner as I had been dreaming out it all day long…except I didn’t have the potatoes o’ brain I wanted. Alas, at least I had part of it! I whipped two eggs together and sautéed up the last of my leftover veggies plus some artichoke hearts to put inside. When I was at TJ’s last weekend I picked up some Sharp New Zealand Cheddar Cheese to try and couldn’t help but use it on this! I used about an once and put some inside and some on top…
Nom nom nom with tomatoes on the side…I never wanted that cheese to end. There are definitely going to be grilled cheese sandwiches in the future with that cheese! Not as good as Cabot’s Seriously Sharp Cheddar Cheese but as it’s not sold on the West Coast (PLEASE CABOT PROVIDE FOR POOR LITTLE ME! AND MY DAD!)
And to end it all on a sweet note I had the last of my fruit salad…
