Mixed Berry and Chocolate Chip Bread

Looking for a low sugar and naturally sweetened soft bread to have as either a snack or dessert?  It’s a great and easy recipe, you probably have everything on hand, and even more, it’s vegan!

(Blackberry Version)

Ingredients:

  • 1/2c unsweetened cinnamon applesauce
  • 1/4c packed brown sugar
  • 1c Unsweetened Almond Breeze (or any non-dairy liquid you want to use)
  • 2tsp vanilla extract
  • 2C all purpose flour (you can mix this up and use all whole wheat, but be aware it will come out extremely dense, or can choose to do one cup of each)
  • 1.5tsp cinnamon
  • dash of nutmeg
  • dash of ginger
  • dash of sea salt
  • 1tsp baking powder
  • 1/2tsp baking soda
  • 1/2c vegan chocolate chips (I use WF 365 brand)
  • 1C mixed berries, frozen

(Raspberry Version)

-Preheat oven to 350 an grease an 8×8 pan or 12 muffin tins.
-Mix together applesauce, brown sugar, almond breeze and vanilla in a bowl.
-Mix together all dry ingredients, then add in wet ingredients without overbeating.
-Add in berries (make sure they are still very frozen!) and chocolate chips; mix just enough to combine.
-Bake for 30 minutes until a knife/toothpick comes out clean.  Let cool then cut.

    I miss running in Tallahassee! It is such a great running city because there are sidewalks EVERYWHERE and you don't have to worry about interstates or such like you do in orlando. :)

    Oh and the road you ran on is Capital Circle ;)

    Good luck with your car today! I had a Nissan Sentra that loved to burn through oil on long trips…poor baby scared me to death when I was moving from Wisconsin to Rhode Island. And I was worried about car trouble all the way from Rhode Island to Seattle in a saturn 2 years later. Be safe! :)
