Oh a day full of choices…I have been back and forth over everything and anything!
I woke up way late today…I think my body had finally caught up with me after all the work of the past two weeks and I got a full 9.5 hrs of sleep! I was asleep until 9.30 in the morning! That’s unheard of for me!
Anyhow, after last nights events…my fav beers = mucho snacking = guilt. Sorry, being brutally honest. Made me wake up with the most horrible mentality but I didn’t let it hold me back from my Saturday!
We left around 11 for the beach and somehow it took us almost 2 hrs to get there! So you can guess that by the time I got there, my tummy was screaming that my Kashi Strawberry Fields/banana/USAB was not enough for that amount of time before a run!
We got there and I snacked on 1/2 this Odwalla bar before chugging some water and heading out for my run!
I ended up doing just over 4 miles in about 38 minutes around Virginia Key and I was a sweaty mess afterwards. Can you tell by my nasty hair? And retched tan lines? Hah!
At least the lunch looks good: the other 1/2 of my Odwalla bar, greek yogurt, a small apple and strawberries.
I drank buckets of water and lathered on the sunscreen like there was no tomorrow…and still got burnt. How, HOW?! DANGIT! I was just getting over the last one!!! And had two carrots. So random.
By the time we got home I was excited for dinner. Not because it included a new fruit, but because It was going to be able to use my new plates and hopefully make some pretty pretty pictures!
The new fruit? Asian Pear!!!
I’m sure I’ve had one at some point in my life, but it’s nothing I can recall. Anyhow, this one was probably not as ripe as it should have been but because I dropped it on a drawer edge and made a cut in it, therefore needing to put it in the fridge. But I loved the crispiness of it (I have a texture thing against soft fruits like pears and such…) and it wasn’t too strong of a pear flavor! Two thumbs up in my book…except that they’re expensive to buy! Booo!
And then…there was dinner. I had too much fun with it and my camera outside…
I simply could not pick just one picture to show you. The last three are actually really good photos if they wouldn’t get blurry when I stretch them out (what the hell lesson have I not learned from my camera about this kind of logistical crap!? ARG!)
What’s in the open face sandwich you ask?
Everything great if I might say. I toasted some sourdough bread, spread some Laughing Cow on it (in which afterwards I wish I had used my real cheese), then added a piece of baked tofu, grilled and breaded eggplant and a slice of tomato. The only other thing I would have loved to have had was some artichoke hearts. It would have been DIVINE that way.
I might have eaten a few more pieces of eggplant after the fact…
I thought I would be squared away for the rest of the night, but my tummy was rumbling not three hours after my dinner. So I had to make dessert.
I’m trying to get more focused on some cleaner eating (ie walking AWAY from the chocolate) so I decided on my own version of ice cream…or sorbet, with chunks. Hehe.
I blended together a 1/2C each of frozen blueberries, boysenberries, raspberries and fresh strawberries, with a splash of USAB and 1T of Naturally More PB. I topped it off with a bit of Kashi Go Lean Crunch and there you have it! Such a great and healthy dessert!
Now I’m going to set back and watch, for the first time, Julia and Julia. I can’t believe it has taken me this long to finally watch it! Loving it so far!!!

I like NOT choosing too and having it all
That's such a good movie.
And I love Odwalla bars generally, but I can not put down that flavor. The protein tastes awful to me
your open faced sandwhich made my mouth water….you are so creative with your meals!

LOVE your meals girl! I WANA GO TO THE BEACH!
Hey! What a nice day at the beach
And a fabulous dinner. I love eggplant. I used to think it was gross but I honestly just think I hadn't really tried it! Enjoy the rest of the weekend
Running at the beach sounds like a dream! And your sandwich looks great. Bet it was fun to eat!
Jealous that you get to go to the beach. Its a balmy 50 in MA today!
That open faced sandwich looks amazing – eggplant and tomato is one of my favorite combos!
I love Asian pears! They are definitely one of my favorite fruits, but yeah, they are super expensive. I never get them.
Mmmm your dinner sounds awesome!!! I haven't mastered the whole eggplant cooking thing yet.
Your dessert sounds delicious too!
I love Julie and Julia, it's so sad but happy! If that makes any sense…

i do like asian pears – i just don't get 'em too often b/c i'm too lazy to peel them….
Looks like a great day at the beach!! So jealous you can sunbathe in April
I always get the "drunchies" when I drink too, but I try to remind myself that it's OKAY to pig out every once in awhile when I eat pretty damn healthfully 80% of the time. You'll never regret stilly nights with your friends
I'm so jealous of you at the beach! Sorry about the sunburn, though. I think I will make eggplant for dinner, it looks so inviting!

So jealous of your beach day! Sometimes I wake up with the same mentality, but I choose (usually) to make my next choice be a healtheir one
