Today was a crazy day of me raging through large stalks of typha and trying not to get the boat stuck! It was madness but so freak’n awesome at the same time! We have a few pictures but they are on other cameras, so hopefully I’ll be able to share them a bit later!
I went for a run this morning with my coworker, in which I originally thought was going to be 4 miles, and turned into 4.6 miles, which we ended with a negative split, by TWO MINUTES (totaling at 41.30 min!) I knew I was running faster on the 2nd half, but I didn’t think it was that fast! Def reassuring for the ING Miami Half Marathon…in THREE DAYS!!!
I came back and had a super fast and tasty breakfast which I upped a bit knowing I was going to be in the field for many hours. I mixed 1/2C quick cooking oats w/ cinnamon, raisins, a diced banana and topped it off w/ a tablespoon of natural pb.
Seriously, this is my favorite kind of oats…though I do one day need to try Cocoa Oats…I just can’t have chocolate that early in the morning or I’ll be left wanting it ALL DAY LONG. Something I need raging in my head with my weakness for cravings!
All the fun of field work on the airboat and eating in the field commenced and ended, with getting soaked washing the trucks and playing with more fake gator heads. Sometimes I think I’m crazy living the way I do!
I was excited for dinner once I got started on it!
black beans soaked in rotel with added cauliflower, broccoli and zucchini
sweet potato fries
a starfruit on the side

But the best part of the night was when the smell of this came whaffing out of the oven:
We had some very aged bananas sitting on the counter beckoning to be made into my Mom’s favorite Banana Bread Recipe!
This thing didn’t get more than 5 minutes to cool before everyone dug into it. I had a bite, but was trying to refrain so I could chow on some tomorrow…that’s if there’s anything left!
I’m super stoked for tomorrow since I get to go out during the day to do some work and then get to go out and do a night run on the boat! It’s going to be crazy with all the gators out and it being completely dark…but I’m all for it!
