One Step Back

I took some time today to take a step back, and look at things in a broader picture to see if this “rut” I’m in might be related to something other than just food, or no schedule, or running.

So what did I come up with?

  1. I’ve been frustrated the past few days with the knee issues I’ve been trying to deal with, since I have a 1/2 Marathon to run in Miami this Sunday
  2. I think I’m also still trying to adapt my diet again to the aspect of field work and what is suitable and sustainable out there without spoiling and keeping me energized with all the work we do.
  3. I also believe that I’m just far away from all of my friends (ohhhhh Orlando and Gainesville why are you so far away?!) and my family again that I’m having withdrawals already!

Sigh…hopefully I’ll be able to pull myself out of this funk quickly, because I hate it!  I want to be my happy jumpy funny self again!  You’ll see what step I took today to work on that!

I started the early morning off on the right step with a modified version of Miss Gina’s Breakfast Cookie!  Mine are really simple and actually I prefer them this way:

  • 1/3C Instant Oats
  • Smashed banana
  • Cinnamon
  • Splash of water/UAB
  • Cranberries
  • 1T PB

I smash the banana with cinnamon, add the oats and cranberries, then put in the water to let it set overnight.  I spread the PB on in the morning because I don’t like it cold and it tastes great!  I do it this way because it keeps the amount of sugar down to a minimum…as I’ve made these for my dad and modified it this way because he can’t have a lot of sugar in his diet.

We headed out to the field for some more airboat training pour moi as I need to get my hours up before the season starts!  But boy oh boy was it a workout since the steering stick on this boat was super hard to pull and push so my left shoulder/bicep/tricep is killing me right now!  I’m going to be buff by the end of the season!  Yeah!

We stopped to snack after a few hours and I had two carrots w/ some spinach artichoke hummus…and admired the scenery…

One of the guys on our team had yet to be on an airboat and in the everglades, so it was exciting to see him so ecstatic about the whole experience!  I remember being terrified the entire time I went out for the first time!

We didn’t get home until around 1.30 (I had a small apple on the way home) and I was ravenous so I mixed together the quickest thing possible: spaghetti squash with marinara on an Arnold’s Thin with a pear.  I’m quite proud of myself for trying out pears again since I’ve always claimed to hate them…I think it’s the whole: I tried it once it probably wasn’t ripe I didn’t like it so claimed it was bad and never wanted to try/eat it again.  Did you get that?  Hehe…

I spent the afternoon researching bush wackers and snacking on this bar:

Goodness gracious it’s like eating a reeses but it’s filled with such better ingredients.  I was in heaven…for the minute it took me to eat it.  I should have taken my time…but I couldn’t help it!

I had a bowl of H2H early evening to tide me over before the run I decided to try, as my knee is feeling better today!

I headed out and did three miles at a nice steady pace and to boost my mood…danced down the block and back to some new tunes I downloaded to my ipod yesterday.  It was my own dance party in the street!  It was great!  I felt silly at first, then realized out street is so dark and scarce that no one was going to see me and I was safe from feeling embarrassed.  Great mood booster.

I had an eggplant to use and I wasn’t sure what to do with it, then remembered I had this in the cabinet and could mix it with my eggplant bites!

I ate half the package w/ about a 1/4 of the eggplant and a toasted slice of Dave’s Killer Bread.  It was pretty spicy for my taste; I’m a light weight!

And as a refreshing end I had a mango.

I sliced up about 1/2 the eggplant to bake with a coating of some cornmeal creole seasoning one of my coworkers had.  I tasted out a piece and I can’t wait to have some of them tomorrow. Any suggestions of what to pair them with?  I’ve never tried creole seasoning before and don’t know what to have with it!

Ending the night watching the tube and catching up on google reader…which suddenly started to spit out entries like there was no tomorrow!  I’m glad I’ve got more entries to read now; my reader was getting low!

[[Edited to add: I just snacked on a piece of my ww blackberry chocolate chunk bread…guess that run made me hungrier than I thought!]]

Hi, I'm a new reader (found your blog through graduatemeghan)and have been reading for awhile and decided to unlurk so that I could ask about the name of that pseudo Reese's bar ;)

Also wanted to add that I'm glad that you were able to have a nice day today and do the things that boost your mood. With regards to knee problems, I'm going through some myself (was actually diagnosed with PPS last week by a doctor) and I've found that rest, icing, and eating LOTS of calcium (then again, I get a lot less calcium than the average person, I think). Hope you continue to feel better and good luck on the half this weekend!

I hope your knee feels better soon! I hate injuries; they are so frustrating.

I like eggplant on sandwiches or over couscous with veggies.
