And…

Again, I didn’t sleep well last night. Up again at around 3.30am and not able to fall back asleep…this is becoming no fun, and a total pain in the arse head, because I’ve had a migraine ALL DAY LONG.

So I got out of bed, and exercised. Nothing better than to beat the crap out of yourself to make yourself tired and go to sleep right? 4.5 miles later with the all weather track, a balmy 85 degrees F and my new shoes…and I wasn’t tired, I was just starving. Ack. But I made the most awesome breakfast: Arnold’s Thins French Toast!

blog 360

The french toast is made w/ two arnold’s thins dipped in an egg white, cinnamon and a dash of vanilla unsweetened almond breeze. Then I mashed up a 1/2 a banana and some naturally more pb and presto!

With a side of watermelon.

Breakfast was eaten pretty late but I was still hungry about 2.5 hrs later, so I had lunch, which was pretty light. I finished off the vegetable bread and had it w/ a laughing cow cheese wedge, hummus, lettuce, tomato and red bell pepper. So pretty and JUICY! I was a mess afterwards…quite the sight.

I went and ran errands and came back to a very pink snack, don’t you think? And I hate the color pink. I like my blue and red, ok? Anyhow, pluot, watermelon, some white nectarine in there, and RASPBERRIES! The cartons were only $.99 at Ralphs…total steal if you ask me!

Then my exhaustion finally caught up on me…and I feel asleep for 10 minutes on the couch. Yeah, a real doozer. Meh.

I was a bit disoriented afterwards so deciding on dinner was a bit of a challenge. First thing: Fruit. Best thing about summer, all the great produce! Watermelon and cantaloupe!

Main Course: Chik’n patty on an Arnold’s Thin w/ lettuce, tomato, mustard and onion with a veggie salad topped with chickpeas.

I normally don’t add anything but veggies to my salads but I’ve noticed that most days after I’m done with dinner I’m usually hungry w/in about two hours. So I know I’m lacking something, whether it be fat or protein, so I vouched for a protein experiment today. We’ll see how it works!

Off to scrapbook…I’ll have to show you my workstation mess of the living room which looks like a bomb hit it. It’s awesome. :)

Don’t forget about the Giveaway! Only a few more days!!!

All of your food photos are so summery! I'm loving the amazing amount of fruit you've got there. And 0.99 for raspberries is a total steal! Lucky!

I would just like to step in and defend the color pink! I know, I sometimes wish it weren't my favorite color, but I can't help myself.

OK- that french toast with the arnold thins looks PHENOMENAL!!! Oh I love it so! I love the volume of it- ya know? You can have four pieces! But I think I'd be right witchoo and be hungry 2.5 hours later, fasho.

I hope you finally sleep well tonight!

sorry to hear that you're sleepless still… did you try to eat some carbs before bed? or when you wake up in the middle of the night? that might help! :)

You don't like pink…perhaps you'd better not look at my blog ever again then ; ) I love pink! Well, my favourite colour is black, but it comes a close second…I have dual personalities when it comes to colour.

Well done you for running on so little sleep and with a migraine! I'm sure the endorphins will have helped with that, though…hopefully!

All of that fresh fruit looks wonderful and perfectly refreshing for summer : )

4.5 miles on a track is very impressive. What is that, 18 laps?! Wow! Sorry about the sleep :( Hopefully you can go to bed early tonight since you've been up for so long and catch up?

Sorry about your trouble sleeping. Sometimes when that happens to me I find that adjusting my night routine helps – I'll ususally add in some stretching and meditation type relaxation and it does help a bit. Hopefully you'll get a full night soon!

sometimes I have to go for a hard/long run just to exhaust my body (and oftentimes my brain) so I can fall asleep. Definitely have some insomnia issues of my own, so I totally feel for you. :(

  14. katecooks says:

i hate when i am hungry so soon after dinner! i intentionally eat around 8 or later because i am still usually up another 4 hours after that!!!! for some reason, i can hold off on dinner, but then can only last another little bit before i need to eat again or just put myself to bed!

  15. The Globetrotter says:

I have trouble sleeping too :( I know what you mean. Sometimes I just wake up early a few mornings so that I'm so exhausted by the time night falls I just have to crash… eventually my body catches on. Hope whatever you do works soon darling!

  16. Kelly says:

I need to buy some arnolds thins. :) They look super yummy as french toast.

  17. lighterportions says:

Whoa whoa whoa that is some KILLER french toast going on there.

Pink isn't my favourite colour either but it sure makes a tasty looking SNACK.
