I promise

I didn’t fall off the face of the earth. :) I’m safe at home now in Orange county with the family and have some fun things planned for the weekend with them, so I’m excited!

Here is a recap of yesterday’s eats though!!!

I had this after a nice shower to clean off from the race…

I snacked on these throughout the afternoon to keep my hunger at bay:

I spent most of the day in the kitchen after the 10k and boy was I busy! I ended up making and baking all the following:

-Tina’s pumpkin bread sans the chocolate chips and cocoa powder and with walnuts
-Roasted Potatoes, Mushrooms, Cauliflower, and Brussel Sprouts
-Baked tofu
-Butternut Squash Hash
-Almond Cranberry Mixed Greens Salad

My roomie mad the following:
-Sweet potato w/ brown sugar and marshmallows
-Mashed potatoes w/ cheese and herbs
-Fried Mushrooms
-Green Bean Casserole
-Corn on the Cob

Her mom made the Turkey which was stuffed w/ rice and ground beef and spices

here is what I had: (from top clockwise) cranberry almond salad, roasted mushrooms, tofu, roasted cauliflower, 1 brussel sprout, roasted potatoes, butternut squash has, big corn on the cob

Seriously, this was the best T-day I’ve had since i became a vegetarian because I actually had more options than just raw veggies and rolls! Everything was so good!

After this and cleaning up we headed over to my roomies future sister in law’s house for a 2nd feast, but most of it had meat, so I didn’t eat much. I had a little bit of salad Arabic style (seasoned w/ dried mint, garlic, evoo and lemon juice), and 1/2 a small roll. I brought some of my pumpkin bread over to share and ended up eating 1.5 pieces; it was so good! it didn’t taste too strong of pumpkin which is why I think I liked it. I also had 1/2 an arabic dessert which is kinda like a thick crepe stuff w/ a heavy cream filling…it was too strong for me and I was full, so I stopped eating it. Sorry no pictures of those; felt kidna weird taking pics of it in front of her family.

But today I slept in super late since i didn’t get to bed till after midnight. I slept in till 9.30 then hit the road about 10.30 to meet up w/ my brother’s to head over to their place for a little bit. By the time we finished driving around it was noon and I was starving! i didn’t have breakfast (oops) so Had a HUGE salad made of the leftover salad from last night…it was a nice big portion. I had an apple on the side, and I was surprisingly very full afterwards!

Now i’m off to chill out and hopefully get a walk in at some point today…otherwise heading home to spend some time w/ the family and see my best friend!!!

Oh, and thanks for all the Congrats on my race! I got the official results and stats for ya!

Official time: 53.03 (minus my bathroom break I’d say 52.45!!!)
Overall: 766 out of 3094
Women: 236 out of 1656
Age division (20-24): 27out of 136

I realized afterwards how well I did considering all the circumstances (ie rain [obvi], all those people in the race, no real warm up or stretching, no snack, no water, etc.) I did really really well! Now I wonder how i would have done if there weren’t so many people and no rain…I think another race might be in the future!

    I’m so glad you had a great Thanksgiving!! This was my first real vegan thanksgiving (last year I just picked from the veggie tray) and I really enjoyed myself as well.

    I can’t belive it’s only the weekend! I hate to admit it but I can’t wait to go back to school…how lame am I?
